   Covent Garden Quiche

Covent Garden was London's old fruit and vegetable market which relocated to Nine Elms in the 1970's. The market buildings are still there but these days are really a tourist attraction with souvenir shops where the fruit and vegetables were once sold. The name is still strongly associated with the best in fresh vegetables and fruit - hence the name of this quiche.
Ingredients
Serves: 6

175 Gram Plain flour (6 oz)
1/2 Tsp Mustard powder
90 Gram Butter (3 1/2 oz)
75 Gram Cheddar cheese, grated (3 oz)
Cold water, to mix
1 Medium Onion, chopped
1 Clove Garlic, crushed
1 Medium Pepper, red or green, seeded & chopped
1 Medium Courgette, thinly sliced
2 Eggs, beaten
1/2 Teaspoon Dried mixed herbs
225 ml Milk (8 fl oz)
Method
Place the flour and mustard in a bowl, cut 75g (3 oz) of the butter into flour and rub in until the mixture resembles fine breadcrumbs. Add the cheese and sufficient water to mix to a dough. Roll out on a floured work surface and use to line a 20 cm (8 inch) flan tin. Bake blind at 200 �C / 400 �F / Gas 6 for 15 minutes.

Melt remaining butter in a non-stick frying pan and cook the vegetables until softened. Spoon into the flan case. Beat together the eggs, herbs and milk and pour into the flan. Bake at 180 �C / 350 �F / Gas 4 for 25 minutes or until set.
