225 Gram Streaky bacon, chopped (8 oz) 1 Medium Onion, finely chopped 100 Gram Double Gloucester cheese with chives (4oz) 150 ml Single cream (5 fl oz) Freshly ground black pepper
Method
Dry fry bacon until crisp. Remove bacon and fry onion in bacon fat until soft. Drain well.
Crumble cheese into a food processor and add bacon and onion and a little cream. Blend until smooth, gradually adding remaining cream. Transfer to a small saucepan and heat gently.
Stir in pepper to taste and serve warm.
If you can't get any Double Gloucester with chives, use plain Double Gloucester or Cheddar and add a few snipped chives to the mixture.
