Lady Sarah's Potato Cakes
These are usefully made from leftover mashed potato and should be very light. Serve with bacon or fried eggs for breakfast.
Ingredients
Serves: 4
225 Gram Floury potatoes, boiled and mashed (8 oz)
15-25 Gram Butter ( 1/2-1 oz)
Salt
1 Egg
50 Gram Ham, finely chopped (2 oz)
Butter for frying
Method
Mash the potatoes with the butter and salt. They should be rather dry.
Add the egg and the ham.
Form into little flat cakes and fry in butter until golden.
